This is an easy recipe that’s a great way to use up leftover chicken from your Sunday roast. Enjoy it either in your sandwiches or as an accompaniment to a jacket potato for an easy lunch/dinner, or just on its own with a salad.
One of the great things about this recipe is you can adapt it to suit your taste
Leftover roast chicken, or buy some ready cooked chicken breast/legs
Handful of dried apricots, chopped or sultanas or combination of both, and more or less if you prefer
3 tblsp mayonnaise, or enough to mix
1 tsp curry powder (we use mild but vary as required)
1 tblsp Matthew’s Preserves Spicy Pineapple Chutney (Can be substituted with my Mango Chutney, Spicy Mango Chutney or Spicy Banana Chutney)
Combine all ingredients in a bowl and mix, add additional sultanas or apricots if you wish
