Marinade for Barbecued Chicken/Vegetables

Cooked, marinated chicken drumsticks on a barbecue

This is an easy way to incorporate the wonderful flavours of my chutney into your barbecue and can be varied depending on what chutney you have to hand. Also works well with my Plum Sauce.

If you prefer, you can use with chunks of chicken breast threaded onto a kebab skewer, or a selection of vegetables of your choice.



2 heaped tblsp Matthew’s Preserves Spicy Pineapple Chutney/Mango Chutney/Plum Sauce

1 tblsp olive oil

Chicken breast cut into chunks/chicken drumsticks/vegetable selection of your choice



  1. Mix the chutney and oil together in a bowl large enough to hold your chicken
  2. Make several scores in the chicken and massage the marinade mixture into the meat; or mix with the vegetables.
  3. Leave for a couple of hours for the marinade flavours to develop into your meat/vegetables
  4. Cook on your hot barbecue following recommended guidance.
